GLUTEN FREE CREPES
One thing I love making (and most importantly eating) is breakfast. My favourite breakfast of all time would have to be pancakes, pikelets, crepes - you get the idea! I've been gluten free for almost 12 months now and a lot of the gluten free crepe recipes I've tried have been gluey or rubbery and down right disappointing. However, I honestly believe I have discovered the ultimate gluten free crepe recipe.
Ingredients:
1 cup oat flour (gluten free)
5 tablespoons potato starch
1 tablespoon coconut sugar
pinch of sea salt
1 egg
1 1/4 cups sparkling water
1/2 cup almond milk (or milk of choice)
2 tablespoons melted coconut oil
1 teaspoon vanilla extract
Method:
Mix dry ingredients in a bowl or food processor. Add remaining ingredients and blend until mixture is smooth and even. Add a teaspoon of coconut oil or butter to the pan and pour on enough batter to get a thin, round crepe. Cook until the surface starts to bubble a little and looks dry, flip with a spatula and cook the other side. Prepare the rest of the crepes and enjoy with maple syrup, peanut butter, coconut yogurt and berries.
